Is there a sage tree? A tree that has the same smell of sage and can be used to cook with?
There is a shrub called Texas sage that could be trained into a tree. Is this perhaps what you were thinking of? As far as I know, there is no official tree that smells like sage.
What do you do with the flowers from a sage/mint plant? Why is it that sometimes the plant has flowers and other times not?
By far the best thing is to not let them flower. It seems to make the herby essence less strong. Keep clipping the shoots short and it will encourage lots of green growth, and inhibit flowering.

There are tons of red salivia, sage so it is hard to tell which cultivar this could be. I cut my sage way back about two weeks ago and it has come back with a vengence. I live in Texas and things grow very fast here. Sage are forgiving and probably the cutting back will give you a flush of new blooms.

Now tidying up the garden for winter. My sage bush has grown quite big. Should I prune it back, or would that cause problems?
We would recommend that you leave it for now and prune in the spring. If you prune it now, you could cause it to put out new growth, which will make it more vulnerable to damage in the winter.
