I want to try to cross pollinate similar species of pumpkins. If successful, will third-plus generations of the seeds from the fruits of those cross pollinated plants produce the hybrid, or will the plant go back to its original size, color, etc. ?
As long as the 3rd generation is created from a male and female blossom from the 2nd generation crossed variety, they should hold the characteristics.
Can I plant the acorn squash and pumpkins in the some garden or will they cross pollinate?
Unless you are planning on collecting seeds, cross pollination is not an issue. These articles will help explain more:

I want to plant pumpkins for a PTA fundraiser in a cornfield that was treated (pre-emergent) with atrazine. Will this prevent the pumkins from growing?
It depends on the type of pre-emergent and how long that pre-emergent stays active in the soil. If it is a long lasting pre-emergent, then yes, it will stop the pumpkin from growing. You may want to start some seeds in paper cups and then once they sprout, transfer the cup and all into the treated ground. This will get around the pre-emergent as it will not affect them after they have sprouted.
I have a vegetable plant that has large leaves and tendrils. Have any idea what it may be?
I would guess pumpkin. A seed from a Halloween pumpkin frequently can make its way into flower beds or vegetable beds and grow as "volunteers" the next year.
I'm growing pumpkin for the first time and the vine was doing well and had grown to 6 feet. Now it hasn't grown in a week and it isn't blooming anymore. The leaves are all up turned like when it is too dry, but it is not dry. Any ideas?
Sounds like you may have vine borers. This article will help:

I have recently planted some pumpkins and they have started turning yellow. The same with my summer squash. All the leaves have turned yellow. Any ideas?
This article will help as it also applies to pumpkins: https://www.gardeningknowhow.com/edible/vegetables/squash/why-squash-leaves-turn-yellow.htm
Grasshoppers ate my first two leaves off of my pumpkin starts before I could get Sevin or something on them. Will they survive?
As long as the terminal bud was not destroyed, they will keep growing. The terminal bud is the end of the vine. That being said, with the plant being so small, they likely did damage the terminal bud, so it is best to plant new seeds ASAP.
