I am very new for vegetable gardening. I recently relocated in Gujarat, Ahmedabad from Mumbai and would like to grow all vegetables for home use in organic way. On net, I'm not getting all details. Can anybody suggest to me any book on it? If I want to train myself in Ahmadabad, how to do it? I have no sources here. I have nearly 1500 sq. ft. area for gardening.
I like this book myself for beginners:
https://www.amazon.com/Vegetable-Gardeners-Bible-10th-Anniversary/dp/160342475X/ref=sr_1_1?ie=UTF8&qid=1315055162&sr=8-1
It is geared for North America, but should still serve you in terms of learning the basics.
I really love " The Vegetable Gardener's Bible" by Edward
C. Smith. It is an organic gardening book with
stepe by step instructions and in the back a plant glossery.
We have vines growing up and in my house. They are the ones with the leaves that are a triangular shape. Is there an organic way to get rid of them? We are trying by hand to remove them away from the house and off the house. Is there an easier way to do it other than a fire?
There are organic ways to kill the vine, but it sounds like you have ivy and these, even after they are dead, must be manually pulled off the building because of the type of roots they have. To kill the vine, you can try spraying it with bleach or pouring boiling water on it. Be advised that these methods will kill whatever the plant it comes in contact with.
I have almost a full bag of organic soil that was left out in the elements for several months. Is it still safe to use? If not, what should I do with it?
It should be fine. As long as it was only exposed to rain and sun, it is still perfectly healthy.

I'm using a new area and it was tilled and Scotts vegetable soil was put over the entire area. After I planted my vegetables, there is grass coming up everywhere. Is there a safe soultion to this? Thank you please help.
You can try mulch, such as a straw mulch or sheets of newspaper laid over where you don't want weeds to grow.

What's an organic way to reduce nitrogen in soil?
I don't know of a quick solution, but applying mulch over the soil, particularly cheap mulch, will help to reduce the nitrogen over time. This is normally considered an issue, but for you it would be helpful. Squash plants will also help use up nitrogen in the soil. They won't produce much fruit though in this soil. Here is more information: https://www.gardeningknowhow.com/garden-how-to/soil-fertilizers/too-much-nitrogen-soil.htm
You can also try adding a little phosphorus to balance the soil some, but I can't guarantee this would work. Some people also recommend gypsum.
