I'm not sure what the problem is, my moon flower seems to be drying up and trying to dye? There are new leaves coming from the center, between the stem and what appears to be a dead top.
This small plant may be overwhelmed in a large container and suffering root rot.
You can try repotting into a small pot with well draining potting soil.

How do I get them to grow upwards? They have spread out over about 5 feet but are low to ground.
You will need to help the Moon Flower grow unto a trellis or support system.
You can gently place the vines unto the support and 'tie' the vines in place with special soft garden twist ties or even twine.

When are they ready to take off? What do I do with them after?
They should start to turn brown. After you may pluck them and either leave them whole or put the seeds in a small glass jar. Plastic works too, But i prefer glass. Store them in a cool dark place, such as a closet, or drawer, away from the light.
