What should the PH of the ground be for me to have a good plum and kiwi crop?
The pH for plums is 5.5 to 6.5.

The pH for hardy kiwi fruit should be 5 to 7.

Last summer my kiwi got spider mites. I treated it with neem and all the leaves fell off during winter. About 3 weeks ago it sprouted all new leaves and looked really healthy. I was so happy! Suddenly the leaves all developed these brown patches. I can't see any signs of mites now. The only stupid thing I did was painted the shed walls with non toxic paint (but it did smell a bit) the plant was in the shed. Could it be this? Please help, I really want to save it. Thank you in advance.
It could be under irrigation which can cause sunburned leaves. These articles should help:

I have a male kiwi that had to be dug up and relocated. The day after he was replanted it began to die how do I save it?
It probably suffered shock from the move. Keep it well watered and follow these instructions:
I have two kiwi plants that I bought in NJ they were supposed to be male and female, well about 5 years later and still no fruit despite massive vines and flowers each year -- it's obvious from photos and descriptions online I only have 2 female plants. How do I figure out which kiwi variety I have so I buy the right male plant? The only info I have to go by is how they look (can send a picture if it helps) and they are cold resistant enough to have been surviving the winter in North NJ.
Go to your local nursery and tell them you aren't sure of the variety name, but you know when it blooms and you need a male plant to go with it.

I have a kiwi plant in my garden which I think is male, not sure. It flowers profusely in May and gives off of rather pungent smell in summer. I need to buy it a mate but not absolutely sure of its sex. Can you help please.
You can tell by the flowers. Here is how:
