I keep trying to figure out what is going on with my jade. I know it's either underwatered or overwatered. We went out of town so I gave it a good watering as I have in the past. The difference this time was I poured some water in the saucer. Upon our return and since the jade has been losing branches and some of the big branches are now drooping. There are spots that look as though it is dehydrated but then the symptoms seem to indicate underwatering. Since we got back and I thought I overwatered it I let it dry out a bit and have slowly been watering again. I can't lose this plant, please help. What I am most confused about is that it still has a bunch of new green growth which to me indicates healthy and thriving. Attached is a photo from a couple months ago.
When going on long trips, you will need to devise a way to water slowly. Leaving it in water will ALWAYS lead to an infection and root rot, as you have found out, unfortunately.
You can try a fungicide, but usually this is fatal. The only way to deal with root rot will be prevention, since once it is present, it will usually kill the plant.

It currently is under a Bottlebrush tree and seems to be doing well except there are no leaves on the backside where most of the shade is. So I was thinking of moving it to full sun all day
It can, over time. You can't expose it directly out of nowhere. What you will need to do is acclimate it slowly over time. I would bring it out to the sun for an hour a day, for a few days, then 2 for a few days, the 4 for a few days, and doubling until they seem to tolerate it.
You will know that they are taking to the sun if they stay crisp and don't start wrinkling or bleaching on you.

Plant is about 2 feet tall and 4 feet in diameter. I would like the make it about half the size it is now.
You have 2 options. One is to propagate the jade with cuttings. The other is to divide the plant. Two articles explain the procedures:

between 15 to 20 years old , very healthy but 'droops' . Have to 'prop' up and now worried the container will fall over with the jade plant in it. Would like to sell it and start with a smaller one and train it to grow more up?

So I’ve had this dwarf Jade/elephants bush with me for a year or two now and I’m really proud of it! But I recently moved to college and I went from a warmer area to a more cold coastal climate. The thing is I have always grown this plant indoors through its entire life and it’s done fine but here in the dorms, we don’t have a heater and it’s starting to get colder and I really don’t want this plant to die what do I do? Some leaves are very weak while some are strong and there is still new growth Im just scared.
The easiest thing that you could do here will be to find a cheap horticultural light. Grow lights will solve both problems that it is having now. It will raise the temperature around it some, and it will give it a little more light.

Plant gets south sun. It is a large plant
This can happen for a few reasons, depending on if it is in container or outside. Over, and underwatering can do this. If this was moved into the sun recently from a darker spot, then this can cause it as well.
Last will be temperature. Sometimes if the temps are low, this can cause what you are seeing.

I have noticed the leaves fall off easily. I do not over water, and I have a plant light. I do not know what I am doing wrong.
It sounds like the plant may possibly have root rot. Cut back on watering. Water only when the soil is dry 1 inch on top. This article will help you determine if the plant has root rot:
