I would like to know how much seed you put in a little square when you have purchased the 1 1/2 or so squares to start seeds. Do you put one seed in each square? Or how many?
Most people will plant 2-4 seeds and once they sprout will thin them out to 1 plant.
I have my seedlings placed on low heat covered with plastic wrap. I also cover the tray with newspaper for darkness. Is this correct?
This is fine until seeds sprout. The sprouted seeds will need light to live.
We just started using the Miracle Grow and Jiffy seed starting mix and I am not understanding why when I add water to it, the water will not soak in. The water will sit on it or run off the side and out the bottom. Any idea what would cause this to do that?
The ingredients in potting mix retain water great if they stay damp, but yes, when they dry out completely they do repel water. You simply need to soak the container in water for an hour or so to force the mix to take water in again.
Also using warm water will help it soak in better.
Does grass seed have a use by date?
Yes, but it is not a hard set date. Seeds remain viable for a time then die. Most seeds remain viable for at least a year, and some, if they have been stored properly, can remain viable for 3, 4 even 5 years.
Proper storage would be a cool, but not cold, dry place. If the seeds have been exposed to high heat or very low temperatures or to humid conditions, they may have died due to these conditions.

What are the risks to the seed if it is sown in the rain? I don't see the difference between planting right before it rains, or while it's raining, since the rain will 'water' the seeds anyway.
It may depend on the type of soil that you have in your garden.
Heavy clay soils will likely hold to much moisture and the seeds may rot in the ground.
If your soil is light and loamy you may be able to place seeds in the soil.
Rain could wash away your efforts though and dislodge the seeds.
