My elephant ears seem to be wanting to lean over. Is this normal? They are starting to grow and are about 2 feet tall.
From this image they look healthy and strong.
Could you be describing leaning over as wilting?
They may appear to wilt or lean if they are needing a drink of water.
You can add a slow release fertilizer to the soil.

My elephant ear plants have brown and gold spots covering them. It rained for one week straight. Could that have something to do with it? I mulched them this week.
This is an indication of to much water. Is your soil draining or are the plants still in wet soil? If the ground does not dry and drain your bulbs could rot.
If you don't feel the soil will dry out, you can dig up the bulbs, clean them and store for next year. If they have begun to rot you will need to dispose of them.

Yes, you certainly could start an Elephant Ear bulb. They will spend about 3 weeks sending down roots before you see any growth above ground.

Why are the leaves of my elephant ears cracking? Doesn't look like they've been eaten on, but every leaf has cracks all through them.
This is a symptom of plant strength. Apply a standard liquid fertilizer weekly.
Follow the manufacturers directions.
One of the "ears" of my elephant ear plant broke off in the wind. Right under the ear. Do I trim the stem? And, if so, where?
Trim it down to the next leaf that is growing. This will leave the the least exposed opening to insects or disease.
