My plant is getting too tall. Can I cut the top off?
You can. For the future it is better to keep the plant trimmed and maintained, and easier than trying to correct a problem later on. Here is an article for more information: https://www.gardeningknowhow.com/houseplants/china-doll/prune-china-doll-plant.htm
Are china doll plants poisonous to humans when eaten?
They are considered non-toxic, but it is best not to consume houseplants if you are uncertain of their toxicity. This website has more information on this plant, along with its non-toxicity: http://www.houseplant411.com/houseplant/china-doll-plant-how-to-grow-care
We have a china doll that I repotted when we moved. We thought it died but discovered that because I put in a larger pot (was getting root bound) we were not giving it enough water. It is now alive and sprouting like crazy! However, now the bottom is woody and leggy and all the new growth is at the top. I cannot find exact directions (video) of showing exactly where to take cuttings to start over. I do not want to kill this plant!
This can be a finicky plant to take cuttings from. It can be done, though. These two articles will give you all of the information that you will need: https://www.gardeningknowhow.com/houseplants/china-doll/prune-china-doll-plant.htm

what part of the plant do you pinch. I have a new 2ft one that is 1 good thick stem and layered lateral branches that looks bonsai-ish, and stunning. Do I pinch the new growth between stem and branches? or is there another way to keep this simmetry and japanese type look. I dont want multi stems.
You can control height by cutting tall stems back to 1/2 inch above a leaf.
New growth will grow from this cut point.
If you want the plant to grow thicker, cut the plant back to a inward pointing leaf.
If you want the plant to grow wider, but at an outward pointing leaf.
Outdoor plants can be pruned in spring and summer.

My china dolls leaves are falling off,and the new growth is looking burnt . Why???
This could be many things. The most common reason would be overwatering, though. I recommend only watering when the top of the soil is almost completely dry. This will keep any infection away.
Other reasons would include being in direct sunlight, and cooler temperatures.
I would also add just a little bit of wettable sulfur to the soil, as this will kill off any infection that is starting.

et tall. how tall can they grow if left alone? While trimming I found some tinny Beetles, and a Praying Mantis with baby.
It can grow to 25 or 30 feet in height.
The tiny beetles may or may not be feeding on the living tissues and causing harm; or they may be feeding on dead material. The preying mantis is a beneficial insect and predator on insect pests. They may be feeding on the beetles.
