How long does it take for these to germinate? The plastic cover caused mold growth. Will the seeds still germinate?
It is really dependent on the type of herb but normally germination occurs within week to 10 days. If mold is a problem, I would remove the plastic ceover and allow it to dry out some.

Salvia hispanica, aka chia can be grown from raw chia seeds. It is frost sensitive so is grown as an annual in most of the US. Raw seeds are found in larger groceries, specialty groceries and health food stores.
I live in Mesa, Arizona. I recently potted an avocado seed in a pot that I had previously grown some chia seeds in. Along with the avocado seed sprouting and growing, a left over chia seed sprouted and began growing as well. The chia seed continued to grow and I eventually transplanted it into its own pot. The chia plant is now 23″ tall. Since it is a spindly plant, I have had to prop it up with a thin stake so that is does not fall over. From reading your article, it appears that I can transplant this chia into my garden outdoors. With this being October, do you think the plant would survive the winter if I transplanted it now? Would it be better to keep the plant indoors and transplant it in the spring? What would you advise? Thanks for your assistance.
According to the article below, they don't survive through winter, but reseed. So, I would not plant it out till next spring. The seeds would survive the winter, but doubtful the plants would.
