I have one outdoor chamomile plant and it gets all the morning sun and some afternoon. The flowers are not that big but I have been cutting them off about half way down the stem. Is this the right way to take the flowers off and will more flowers come as a result of pruning all the flowers. Also do I have to wait until the flower opens or can I cut flowers that are young?
If you are drying the flowers for tea you just want the flower heads. Here is how:

I Had couch grass which I am slowly getting rid of & sieving all the soil which is a clay type but I will be putting a topsoil on top along with compost, any advice would be appreciated.

It appears to be rotting out from the inside. I put some bug granules around it as I have roly polies around. It's still drying up, turning brown and falling apart from the inside. What do I do? It has a good amount of sun until late afternoon, well draining soil and I water around it, not ON it. HELP.
A couple of possibilities come to mind. Is it possibly getting too much heat from the sun? Could it be overwatered? Too much water will cause the same problems as too little water, as the roots become unable to take up the moisture properly. Here's an article I hope will help: https://www.gardeningknowhow.com/edible/herbs/chamomile/growing-chamomile.htm
Can Chamomile flowers be used it they have dried while still on the plant. Mine dried in the garden.
You can try them, but I suspect most of the oils were lost. Chamomile flowers should be harvested at their peak before the petals droop, that is when the oils are highest. Here is more:
