I am in Melbourne and it has been both cold and warm. It is near the end of May. I didn't know what bolting meant till I looked it up. It has a flower and some leaves. Do I just pull it out as a did or is there something I can do?
When a boy choy bolts, it is recommended to harvest the entire plant. The smaller leaves could be used in salads and even the flower stalks, according to some, are still tender and sweet enough to use in stir-fry and salads. I guess you will find out!
Here is an article on how to prevent bok choy bolting that may interest you:

Can Bok Choy be eaten even though it has started to produce flowers/seeds?
If Bok Choy has flowers, then it has bolted to seed and is passed its prime. Like cabbages and broccoli, they like to grow in cool weather. Too hot and they will get bitter and bolt (start producing flowers and seed). While edible, you can try to eat them, but they will probably be tougher and more bitter.
Does bok choy crop twice or only once? We have huge leaves and are near Clemson, SC. I don't want to just jerk the whole plant out, although I had to go save the pest damaged ones. I'm attempting permaculture. Picture taken from resprouted in early October.
You can harvest a few leaves or the entire plant.
Leaving the roots intact and in your growing zone you can have multiple crops.

I am growing mini bok choy for the first time. It is about 4 inches tall, but is now starting to bloom small yellow flowers. Do I cut off the flowers to give more strength to the leaves or can I leave them on? Thank you very much for your help. terri
Flowering generally means that your plants have bolted.
There are now varieties that are grown and harvested with the flowers.
Do you know the variety that you are growing?

My bok choy went to seed almost as soon as planted it. Is it still good to pick and eat?
Yes, you can still eat the Bok Choy.

I planted some Bok Choy (plants) and it bolted. I didn't know that it was Bok Choy because it didn't look like it does in the store. After googling many images for Asian greens, etc., I found that it looks like "pak choi bolting" images. I pulled one plant and the root looked like a rutabaga, but the leaves didn't. Thank you.
It would be edible, but generally when a plant has bolted, it becomes quite bitter.
Cooking the Bok Choy though can help with bitterness.
