Aeration every couple years or so it helpful for any kind of lawn, but because you are in Georgia and the soil tends to be clay there and gets compacted easily, more frequent aeration is recommended. Yearly, and even twice yearly core aeration is often recommended for your area. It will help the roots to grow better, which in turn does make for a nicer looking lawn.

I would recommend pouring boiling water on the areas where the bermuda grass is growing. Boiling water will kill whatever it comes in contact with. Alternatively, you could cover your garden plants with cardboard boxes or use a gallon milk jug with the bottom cut off as a shield. Spray the grass with an herbicide when the grass is actively growing. One application won't work, as it's going to take several.

Your final mowing height generally depends on the health of your lawn. If it is healthy, do not change the mowing height. If it's not so great, then raising the mower about 1/2" is usually recommended. You can return to normal mowing height with your first cutting in spring.

You almost have everything that they would eat, except Bermuda grass. That would be fast spreading if you are in a warmer climate.

Usually, the best time to seed is in early spring, but in the case of Bermuda, it would be better to start late spring, or early summer.

Here is an article that you will find useful: https://www.gardeningknowhow.com/lawn-care/lgen/lawn-seeding-tips.htm

It can be hard to grow grasses under these, as they make the soil unsuitable for things to grow around them. This article may help some, but there is not really a good way to grow things under pines, or where their needles are: https://www.gardeningknowhow.com/ornamental/trees/tgen/tips-for-growing-grass-under-a-tree.htm
