I LIVE IN MERRITT ISLAND FLORIDA.
Could you include a photo? This sounds like a fungal issue that was fed with nitrogen, which in large amounts will be toxic to the banana, and will allow infections in the soil to thrive.
This will need to recover at least a year before you feed this anything. When you do feed it, make sure it has more phosphorus and potassium than nitrogen.
Bananas are incredibly sensitive to infection, so you should never cut off dying leaves until they are bone dry. Only cut into dead dry material. Any green material cut will almost always get some sort of infection.
Apply Dolomitic Lime, and wettable sulfur to the area. Give this about a year to recover. Once the banana plant dies back to the ground, then cut it back and let it recover. Expect a year or two before it sets fruit again.

Can I cut back a shrub that is about 8 feet tall to about 4 ft without killing it?
It's best to keep the height reduction and removal of foliage to 25% maximum at one time, in a year. The more extreme reduction of 50% may not kill it, but there are possible detrimental effects.

I’ve just bought an indoor dwarf banana plant, an indoor coffee plant, an indoor Mexican palm plant and an indoor golden palm plant. Each plant is in a pot around 4.5 inches deep and wide. The banana plant has some dark discolouration on a few of the leaves and two leaves have turned/wilted. The other plants seem to be doing fine. I’m just wanting to know how to help my banana plant mostly. Also as it’s spring, I’m wanting to know what size pots, what soil and what fertiliser I’ll need for each plant. As I’m hoping to repot them soon. Thanks
Start with and establish ongoing good water management; deep water the banana immediately.
Then start the re-potting process:
https://www.gardeningknowhow.com/houseplants/hpgen/learn-more-about-repotting-houseplants.htm
Re-pot the banana first, into a 10 to 12 inch pot. Where the article says to use compost, use a potting soil blend like this:
https://www.amazon.co.uk/Houseplant-Focus-Repotting-Mix-Litre/dp/B00778YMDE/ref=sr_1_5?s=outdoors&ie=UTF8&qid=1551920640&sr=1-5&keywords=organic+house+plant+fertilizer
https://www.amazon.co.uk/slp/potting-soil-for-indoor-plants/uevfeu79cov674u
Follow up with re-potting the other plants in slightly larger containers, with good drainage holes and saucers underneath.
Use a complete organic fertilizer like this:

Get a good watering program going, not too much or too little.

Indoor . Well lit room .
No, all plants need a container with drainage. You can place rocks or something similar to create a space for water to pool; but this generally only works for a short time before root rot takes place.
You can plant in a plastic nursery pot and then place that pot into a container with no drainage hole.
our bunches of bananas are small in size , yet are starting to show black streaks on them! Each bunch has several hands , four to five on them. Can you tell me what is happening ? The last bunch we had last year ripened from top to bottom and didn't really taste very good.
This sounds like a Black Streak Fungus.

the plant on the photos got so heavy it fell over. we always assumed it only had the flower and no fruit. But the surprise was huge when we saw a large ring of fruit at the top of the flower stem. Does anyone know what type of banana plant this is? the seeds are very large and the fruit is literally filled up with seed.
There are some 500 varieties of Banana Trees.
I believe your images show a tree in the red subgroup of Banana.
I found this link that may help you.

I have a red banana ( Enset mourelii , bottom limbs that are broken or turned brown , should I cut them off ?
Trim back dead palm leaves if winter winds destroy or damage the banana palm's foliage. Avoid pruning back the palm's functional trunk, as doing so eliminates the possibility of flowers and fruit from that stem.
Prune a banana palm's stem only after flowering and fruiting is completed. The stem will not flower or fruit again. After harvesting your bananas, use garden clippers to cut it to the ground, making way for new stalks.
