Can we pick all of the spears, or do we need to leave some?

Hi ! :) We have a large asparagus field . My Husband planted one year old crowns back in 2003. He said that they're Jersey Knights ( Spelling ) . He has always told me not to pick the smaller asparagus because they're the females . I've noticed that it we leave those to go to seed early on in the season , it doesn't seem like we get anymore out of that particular crown? We live in Central Maine , our asparagus starts coming the first part of May , and we usually pick for about 6 weeks. Do you recommend that we don't pick the asparagus that is really small in diameter ? Thank you for any help! :)
With a well established bed, I would not worry about leaving all the female Asparagus.

If I plant all male asparagus seeds, will my plants reseed themselves or do I need the female plant to have the male plant spread. I prefer the male over the female due to the bigger stalks.
They will not reseed, as males cannot produce seeds. They only produce pollen. They will still reproduce with their roots, though. They will spread in that way, rather than spreading by seed. Also, these will all be male, since they are just extensions of the same plant.

can you eat the seeds of the asparagus?
According to the University of California, asparagus berries (and presumably their seeds) are poisonous and should not be eaten.

We live on the Oregon coast & started asparagus from seed in a green house. We up potted them to 4" pots & they are now aprox. 12" tall. The question is do we trim the ferns back & leave them in the pots to over winter in the green house or is there a better way. They are very healthy plants. Thanks in advance.
You could leave in the greenhouse and plant out in spring. They need to have a cold period and you should add extra insulation around them.
Make sure they do not completely dry out.

I know how to plant asparagus, but how do I take care of it when it starts going to ferns? When to cut the ferns, when and what to feed the plants?

we planted a bed three years ago and have just let it grow now it is beginning fall do we need to cut it back or just let it grow till harvest time next spring
Some people do prefer to cut it back, but this is not advised. It will slow the next years growth. Here is an article that will help: https://www.gardeningknowhow.com/edible/vegetables/asparagus/growing-asparagus.htm
