I’m growing a Mammoth sunflower. Wanted to know when is the right time to harvest the seeds and how to harvest them.

thanks just read site Im thinking of going the keeping it on the stalk route.
brown bagging the head sounds like problems if it rains, was looking at netting bags, not sure what that means like burlap and is 23"x36" big enough?
