I’ve always left my elephant ears in the ground over winter and they seem to do well. Should I change this?

If your elephant ears do well in the ground, they will probably continue to do well so there’s no need to change. Variations in the particular micro-climate of your garden and the particular variety you have can sometimes allow plants to survive outside their standard zones. Applying mulch such as straw or leaves can’t hurt, but if you haven’t before they will probably do fine anyway.
