Starting a Coffee Plant From Bean

While I’ve been told it would take 4-5 yrs to yield beans, I was told it actually was a pretty flowering plant so my question is, can I just pick out a healthy looking bean and plant it? And, if so, what is the proper depth for a gallon sized pot? Thanks.
