some of my strawberry plants are light green and variegated in color

My plants are 2 years old and some of the plants were slow to grow this spring and a pale green. They are getting better but are two toned.

Especially given that you’re in a northern area, this really sounds like cold damage. If you had a late winter hard cold, that would increase the damage. Cold stress can affect plants in many ways.
