If you are seeing new growth the you, likely, have roots! You can check by turning it upside down, and lightly pulling it out of the container. The soil should hold together while you check for rooting.
Once they are rooted, then you can pot up into a container that is double the size of the original until it is ready for the next.
An unheated greenhouse should be fine for winter.
