Should I pinch out growing shoots of tithonia

I didn’t last year and they grew about 6 feet tall and had few flowers.

Your Tithonia is also known as Mexican Sunflower. I think pinching it back may be helpful, but you may be having some other problems, too, such as not enough sun. Here are a couple of articles that should help:
