Q.Seedling vs Grafting

So I heard that grafting is usually a better option because the tree will produce fruit quicker and taste like the delicious tree in which it came from but that seedlings can produce bad tasting fruit. Why does that happen and how can you prevent it to grow delicious fruit from seed? Does this apply to growing herbs and so on from seeds as well? I am a beginner at gardening, so forgive me if this sounds too ignorant. Thanks.

Propagation methods are generally specific to plant type.
There can be multiply methods of propagation.

Most Herbs are started from seeds or cuttings.
