Q.Seed soaking

I know seed soaking is not a good test to check if a seed is viable but are peach seeds (bonanza) supposed to float first and then sink? I’m removed the kernels/embryo from inside the hard pit!
I’ve put 3 kernels in warm water and straightaway one floats (bigger healthy looking seed) and two sinks (dried and more wrinkles).
Which one is more likely to germinate?

Some seed soaking is specific to certain types of seeds.
