Saving Lettuce Seeds

I have 8 red leaf lettuce plants that have bolted and are now flowering. How many should I keep to save the seeds for next year? We are 4 people gleaning and harvesting from this garden.

If you allow the plant to flower, it will produce seeds, which you can harvest and save for next season. How many you wish to keep for seed collecting is up to you, but since you have that many plants, I would use half for seeds.
