Q.Santa Rosa Plum Tree Dropping Blossoms

My Santa Rosa plum tree blossoms are falling and it looks like the center was eating out. Have you ever heard of anything like this?

This is normal. The important parts of the flowers are left behind on the tree to, hopefully, produce fruit! These trees are self-fertile, as well. Here are some articles to help you with plum care:
