What do you do with the flowers from a sage/mint plant? Why is it that sometimes the plant has flowers and other times not?

By far the best thing is to not let them flower. It seems to make the herby essence less strong. Keep clipping the shoots short and it will encourage lots of green growth, and inhibit flowering.
