Do you nip out the side shoots of ROMA tomatoes the same as you do for other tomatoes?
The answer to your question is yes you can but it's really optional. The decision to prune is a controversial one it seems. There are those that say it should not be done on bushy tomato varieties such as roma as it will reduce tomato yields.
