I doubt what you’re seeing is termites. Sounds more like rhubarb curculio, which burrow in from top down and commonly affect these plants. Here is more info: http://www.entomology.cornell.edu/cals/entomology/extension/idl/upload/Rhubarb-Curculio.pdf [1]
