Rapid Growing Seedling

Question

My son is doing a science project. He is testing the effect polluted water has on vegetation. We need an outdoor plant that grows rapidly from a seed. Thank you!

Beans are the normal choice. They sprout and grow quickly. I am not sure how cold it is where you are, but if it is still pretty chilly, you may want to try peas instead. They have more cold tolerance.
