Q.Quick lifecycle terminating plant for February Scotland

I am looking for a plant/flower/vegetable that i can sow withing the next two weeks that woyld be able to show germination/growth withing 7-8 weeks , sown outdoors in the month of february , scotland. Looking on google. Got confused with sowing to flowering times, I just need the plant to germinate and show some sort of growth in an outdoor setting in the month of February in Scotland. This is a science project. Wondering if anyone would be able to help? I will also be planting the same in a greenhouse, to investigate the effects on growth due to weather elements. Can anyone help??
