Question about figs

Question

I have the green figs and the ripe ones always have white sap coming out. If I let it ripen another day it would be rotten, so they are very ripe.ive had many like this. I don’t know much about figs but i thought only unripe figs have the white sap? Do you know why she ripe one would have it?
