Can I stop the germination process and save them.

No, once they have started to germinate, the life cycle has begun. You can only save seeds that have not show signs of life. Planting the young seedlings now will likely result in spindly plants, unless you can mimic sprint outdoors while indoors.

Vivipary is quite common in modern cultivars of fruit.
