Pruning a 7ft Gardenia Bush

My bush has had 35 or 40 blooms, mostly on top in a very short time. I would like to remove some of the top so I won't fall trying to reach. Will I still get all these if I wait for all blooming to stop?

You should. In fact, it probably wouldn't hurt to prune it back by up to a third if it's gotten too large for you to manuever around. Here is more information:
