This article will help you with your apple tree: https://www.gardeningknowhow.com/edible/fruits/apples/pruning-apple-trees.htm [1] As for the mango, these trees rarely require much pruning until after they have reached at least 4 years old, and then remove weak branches, pruning more for shape.
