Problem with peach tree

My peach tree is about 11 years old. Puts out plenty of blooms and fruit. Fruit is good till about 2 weeks before totally being good and ripe, then they just dry up and look like old prunes!!  I’ve had one year that I got to pick peaches. Gets plenty of sun and water, have trimmed back and even made sure there is a V in it for more sun. Sap comes out of all the branches, not tree itself, but branches in dime to half dollar size and this is on all branches. Leaves are healthy, blooms are healthy, don’t understand about sap or why peaches dry up.

There are a few things that it might be. The first is that it may be brown rot. This will rot the fruit on the tree and cause it to shrivel up. Here is more information on that: https://www.gardeningknowhow.com/edible/fruits/peach/brown-rot-fungus.htm [1]

The other is the flowers are not being properly pollinated. Improperly or under pollinated fruit will be aborted by the tree early on and can simply just shrivel and dry up on the tree.
