In Back to Eden we lay the potato on top of compost – we use a whole organic potato with eyes that have sprout about 3/4 . Then topped off with 6-8″ of woodchip mulch ..When we harvest we pull up potato isn’t even dirty . and they were only watered 1 time by humans
