How do you tend different growth rates for potatoes

You will have to plant them by their, anticipated, growth rate. The earlier the potato, the later you will plant if you intend to harvest at the same time. Otherwise, you will harvest earlier potatoes, earlier. You will know when they are ready when the tops die off.
