Why would my two perennials perish in the winter in pots instead of in the ground?

The roots in potted plants don't get the same protection they do in the ground. When leaving plants in pots over the winter, if their growing zone is not two zones colder than yours, you should take precautions such as moving them to a sheltered location wrapped in burlap or move them into a garage or basement.
