The cucumbers may be having pollination issues, especially if it’s been overly hot/humid or rainy. You can help it along by hand pollinating the plants. This article will help: https://www.gardeningknowhow.com/edible/vegetables/cucumber/hand-pollinating-cucumbers.htm [1]
As for the pumpkins, it may also be a fertility problem. I would suggest getting the soil tested. Also, check the amount of sunlight in which the seedlings are receiving. Here is more information on growing pumpkins: https://www.gardeningknowhow.com/edible/vegetables/pumpkin/pumpkin-growing.htm [2]
