Pindo Palm

When pruning the fruit of the Pindo palm do I cut the stalk or just the stems with the fruit, and does that stalk eventually become a fond?

You will cut this off when it is dying away. It will naturally fall off after some time, and will not turn into anything else. If the tree is female, then it can bear seeds, but if it is male, then it is, simply, a pollinator. You may cut the whole stalk, or just leave it to fall off on its own.
