Persian shield

What do you do with it in winter? Should it be trimmed back?

It shouldn’t need cutting back in the winter. Persian Shield is hardy only in zones 9 and above, so in colder zones it must be brought indoors or will need protection, such as a layer of mulch placed over the roots.
