Peppers and herbs

I am a first time grower of peppers (one Fresno pepper plant). Things seem to be OK, but I’m not sure how often to water the little guy. The soil seems to dry out pretty quickly and I don’t want to over-water him. It’s in a pot that seems large enough for a single plant, and it’s starting to produce its first peppers. I water every 2nd or 3rd day. Is that too much? And, how do I know when to pick the peppers? Will the plant “die” come fall or winter? We are also playing with a few herbs (basil, thyme, chives, and mint). They, too, are in a pot and seem to be doing ok. They are growing, but they are growing straight up and stick-like. Is there a way to keep them short and bushy? And how often and how much do I cut them for use? And like the pepper, watering and how much sun do herbs like? We are new growing edible plants and want to make sure they turn out. Thank you for any help with this!
