Do red and yellow peppers taste the same as green peppers?

Not exactly. Green peppers are actually the immature fruit of pepper plants. All green peppers will eventually turn into a colored pepper if left on the palnt. Because they are immature, green peppers are more bitter while the red/yellow/orange peppers are sweeter because they are fully mature.
