I have 2 peach trees. Their leaves are turning yellow and falling off. Is this due to autumn or because they aren't getting enough water?

It is likely due to autumn. Peach trees need a period of dormancy and "chill hours" to produce fruit. When the days get shorter, this is a sign to the trees to go into dormancy.
