Can I cut it back and overwinter like a Boston fern? If so, how much should I cut back?

I wouldn't take off more than a third of the plant. You can also remove any dead or damaged stems at the base. To keep them happy indoors you need a lot of humidity. You can mist them and/or provide a pebble tray with water. Here are more care tips:
