Pepper plants have green immature fruit and either red, orange, or yellow mature fruit. Therefore, you just need to be patient as it takes time, depending on the variety. Most varieties of peppers need 100+ days to reach maturity but there are a few varieties that have a shorter season, maturing in 65-70 days.
