Open Cauliflower Heads With Purple Coloring

Some of my cauliflower heads, even as small as 1-2 inches, are showing signs of openess but the stems, etc. are a purple color. We’ve had weeks of high humidity and temps. I know these crops are cool weather crops, but I’ve had success with a summer crop in the past. I have tied the leaves to blanch and it doesn’t seem to matter. I’m in New Hampshire, so the season is usually fickle. What do I need to do?

The purplish stems are okay. The hot weather is more likely the culprit. Sometimes you do everything right and it still comes out wrong.
