Olive Tree Variety

Question

I have a small potted (trained) olive Europea which does not grow taller. I have seen olive trees as bushes/hedges in my neighbourhood that grow extensively and I am wondering how I can achieve that. Is it a different variety? Or do I need to buy a younger plant?
