Typically, this is due to uneven watering, which causes uneven ripening. Leaving them on for longer can help. Many times, tomatoes will appear ripe on the outside, but still need a few days to mature on the inside.
It could be a true potassium deficiency, as well. This can be caused by fertilizers that are too high in nitrogen, or by the uneven watering, as well as heavy uptake by the plants without replenishment.
