We planted cucumbers. In the beginning they tasted fine, but now they seem to have a bitter taste to them. Why?

Try picking them at a smaller size. You may want to grow the variety known as "pickling cucumbers". They are smaller in size and usually much more crispy and with less tendency to be bitter.
